Einkorn is the Grandmother grain to wheat. This ancient grain has remained unchanged over thousands of years. It has gluten, but many find it easier to digest. It has a rice nutty flavor and I find it makes a great tortilla when combined with Khorasan. If you are planning to make bread, you'll want to bake it off in a bread tin - otherwise you'll have a very flat loaf.
