Einkorn is the Grandmother Grain to wheat. This ancient grain has remained unchanged over thousands of years. It has gluten, but the proteins that make up the gluten are in different proportions than wheat and many find it easier to digest. It has a rice nutty flavor and I find it makes a great tortilla when combined with Khorasan. If you are planning to make bread, you'll want to bake it off in a bread tin - otherwise you'll have a very flat loaf.
